Domaine André et Mireille Tissot is a winery in Jura run by Bénédicte and Stéphane Tissot. It was founded in 1962 and has been cultivating its 35 hectares of vineyard, certified organic and biodynamic, for years. The winery is one of the benchmarks in the area. In total it produces some 28 references that seek to express the typical character of the grapes vinified and of their terroir.
The vineyards for Tissot Savagnin are cultivated organically and biodynamically and their soils are clayey-calcareous. Their strains are approximately 30 years old. The Tissot Savagnin harvest is destemmed and pressed gently. The clean must ferments in old barrels with native yeasts. Once the wine is fermented, it ages from 23 to 30 months in old barrels. For about 24 of these months the wine is under "veil of flor", "sous voile", the biological ageing that is typical in the Jerez and Jura area.
Tissot Savagnin is a great wine that is powerful, with a lot of tension and complexity.
